WHere is an easy take on a cocktail from our latest menu. Designed as a party-sized pre-mixed which is packed full of essence of a Christmas time, which makes it ideal for a holiday party. Reserve the remaining cordial for brunch beverages, desserts, or to make additional servings of bikinis.
Bikini Recipe
Makes enough for 10 guests
Ingredients for the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Drink (produces 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Combine all the ingredients into a saucepan, bring to a light boil, agitating so the sugar melts. Next, turn off the heat allowing it to cool down entirely. Decant into an sealable bottle, close it and store chilled, it will last for up to one month.
Preparing the Cocktail Base: Pour the specified liquid ingredients into one large bottle, let it rest for one hour, then filter it best through muslin, making it completely strained.
To serve: Add 85ml of the premix into a mixing glass filled with ice, gently stirring carefully for about 60 seconds to cool it down. Pour to a cold coupe glass or a similar vessel, top with some cranberries adding the final touch by giving it a brief mist of the essential oil over the drink.
